Copper tubing to ice/water dispenser in fridge?

My new fridge was installed on Saturday, and the contractor used copper tubing to connect the water to the icemaker and water dispenser. However, when I opened the fridge, I found that GE supplied a flexible plastic tube that was supposed to have been used. Is the copper tubing okay, or should I have him replace it with the plastic? The icemaker and water dispenser seem to be working fine, and the water tastes fine to me (although BF doesn't think so for some reason). Thanks for your help!
