Thermadore 36' cooktop vs GE Monogram cooktop

I am in the process of changing my glass electric cooktop to a natural gas cooktop. I only have about 35" of space and the hole is already cut in my granite countertop.

I have narrowed my choice to the Thermadore 5 burner cooktop with the low simmer feature and the GE Monogram 5 burner cooktop.

Price is close with the GE being a little less expensive.

Just looking for some input on which to go with.

We use our cooktop routinely to melt chocolat and simmer sauces with a milk base, therefore a low simmering temperature is important to us.
