ideas for sink and vanity enclosed by 3 walls?

We are probably making a major mistake, but we decided to renovate our kids' bathroom at the same time as our master bathroom (leaving us with a gross attic shower for 3 months), but it's summer right??

I've been so involved in picking out stuff for the master bath, and now I have to do the same for the other one. The sink is in a 36 inch wide alcove surrounded by 3 walls. Two walls form the corner of the room, and the other is the tub/shower surround. All other bathrooms I've done have had a freestanding sink, so I'm new to this. Our carpenter will build us anything we want. I'd love to see/hear ideas for this. Do we need a backsplash or sidesplash? The rest of the walls will be bead board to 48 inches high from the floor.

The toilet is directly in front of the sink and it is already kind of crowded when both kids brush teeth at the same time. Any ideas for sinks that can be easily shared? Should we opt for more sink area or more counter area?
