I'm finally getting around to updating this post. The service guy came with the proper screwdriver and adjusted all by one of my simmers down to the lowest possible setting without having the burner blow out and start clicking to reignite. I originally thought that this adjustment affected my HI setting, making it slightly lower, so I asked him to leave one rear burner unadjusted to be used for rapid boiling of large pots of water. My Capital contact called back to ensure that the adjustment had been made and he spent a lot of time with me on the phone while I checked the burners and the control knob, etc. and now I understand that the screw that adjusts the simmer ONLY controls the simmer and it is impossible for it to affect the flow of gas at the hi setting. I don't remember exactly what he said, but apparently there are seperate valves for different settings and the screw behind the knob only adjusts the simmer. I've also learned that by design, the entire knob is not meant to control the flame height; only about 1/2 of the knob is able to control the flame and the low half has no impact on the flame height and is not supposed to. I think that marking the knob as if it has an effect is silly, since the mid-point SHOULD be a visual clue that it is your medium flame and not your simmer flame, but the bottom line is that you have to stoop down to check flame height if you want a medium flame and can not rely on the knob markings except for Ignite, HI and LOW (low flame will be achieved way before the low mark on the knob, but it sill still be Low so it doesn't matter.) Now, about the grates and tipping. Capital has confirmed that pots can tip and they are trying to redesign the grates to solve this potential safety issue, of which they were unaware until I complained of my experience. Either I'm the only one who this has happened to (and it will happen every time I cook with my smaller diameter pots unless I align the handle with a long support), or I'm the only one who bothered to call about it. It turns out that the fix is not as simple as one might hope. If you have a Capital rangetop, you can see that where the longer supports approach the burner cover, that the holes for the gas are of much smaller diameter. This is to prevent the supports from getting too hot when the burner is set to the Highest setting, and becoming damaged and ultimately rusting. All the other gas holes are much larger holes, and this is because there are no grate supports close. So, they can't simply have 4 more supports come closer to the center without considering the extreme extra heat that those supports would get, and still have the 19K BTU at HI that they want to offer. Bottom line, they are working on it and I'm confident they will find a solution before too many months and I will be able to have safer grates! While I was not entirely happy with my few months of slight buyer's remorse, I am very impressed with the ultimate response I finally got from Capital, especially with the fact that they are addressing the grate issue which I think it HUGE! Do I wish I had a different rangetop? Not anymore, because no one else offered an 8 burner option and my issues are either resolved as much as possible or are being worked on.

I too bought a RNB BlueStar from Trevor at Eurostoves. He let me cook on it (and supplied the food!), all without an appointment. Great service. If you can't buy locally, I recommend Trevor. I had a few minor issues, all addressed under warrantee. I don't think it has the fit-and-finish of Wolf or Viking, for example. For cooking, it is truly exceptional. The unsealed burners are great. It is easier to not make a mess in the first place, but if something boils over, everything goes in the sink or dishwasher. A microfiber cloth cleans up the grease on the grates and burner dishes. High power is excellent, especially for wok cooking. I frequently blacken red peppers right on the range. Simmer burner is great, too. I use it for rice all the time. I wish the oven were self-cleaning, but I try to avoid a mess. I've had it for 2 years and haven't really cleaned it yet -- probably soon. I have a Prestige hood, as recommended by Trevor. I could NOT remote mount the fan, so it is pretty noisy. It works exceptionally well, and if you plan to do any high-heat cooking, you need something good. The filter grates go right in the dishwasher with easy. Not particularly stylish, but not particularly ugly either. The IR broiler is outstanding. It browns without burning. How did I get by before? ... It is a cook's range/oven. It isn't the prettiest thing in the kitchen, but it sure works well. It has a purposeful/utilitarian look, which I don't mind. Yes, an induction cooktop would have looked great, but it would not be a replacement. (It would be a nice add-on, though, but I did not have budget or room.)

hey folks, I'm looking for some cooking help and advice. I bought a 36" Capital Precision largely on the basis of recommendations from this board. I love the look and the burners. However, I'm having some trouble with the oven. It seems to take a long time to get hot and doesn't seem to get as hot as I'd like. I had the service guy in to test the temperature -- and he found it was slight over 500 degrees. in other words, fine. And yet, it still doesn't seem right to me. I tried to make a thin-crust pizza on a pizza stone in the oven and it took ages to cook and never charred up. A smallish roast chicken came out spectacularly (maybe the best i've ever cooked) but took much longer than normal. normally a chicken of this size would take around 50 min to an hour, but this took a solid 1:20 to 1:30 or so. I haven't tried the convection yet. Any advice? Am I doing something wrong? Thanks for your help! -Jesse

We have a 36" 6 burner one. It has the rotissserie. We really love it. I got it last July. Our GW friend Smarge has reported to Capital that the burner grates, can cause smaller pots to tip if the handle isn't lined up with the long side of the grate. Capital has corrected this and redesigned the grates, however there seems to be a little anger that they are not offering them free to existing customers. (hey, they know there is a risk of somone getting burned.) At least they acknowledged the problem and corrected the engineering. I did have an issue at Thanksgiving--my 19lb turkey just fit. I had to take the turkey off of the roasting rack, and put my oven rack at the lowest level. Even though the oven is wide, it is surprisingly short. Make sure to measure. Mine is very easy to clean. Except for turkey incident, we are very happy. I love the rolling racks. Are you looking at them?
