this is not an answer to your question, but it is something you might not know about wolf vent hood liners. i was in a wolf showroom last week and noticed some of the hoods did not have edge to edge vent baffles, so the area of actual venting was maybe 12" narrower than outer hood dimensions. i asked, and the salesman pointed out the hood liners that were smaller and that it was only the all stainless steel hoods had the full vent area. since ideally the hood is 6 inches wider than your range, really with a hood liner it should be more like 18" wider! you might want to reconsider using a hood liner, and go with the more functional hood, which would solve your height issue. a charbroiler can generate a lot of smoke.

Yes, I know the hood liner is smaller than the outer hood dimensions, but we will give up the charbroiler before we put a stainless hood up. This kitchen is open to a larger living area with lots of windows for great views and we don't want the room dominated by six feet of steel. We have maxed the blower CFM to 1500 to help make up for the lack of coverage over the cooktop.

I'm thinking of calling Wolf directly today about this.

style vs. function is definitely a personal choice. i was considering a 36" with charbroiler, but will get a 30" because it can fit in the space better.
i was surprised that the salesman at the appliance store said "of course you can't use it like your outdoor grill; you should trim the fat off steak, take the skin off chicken...its great for vegetables."
but then i looked at the wolf use and care guide on their website, and it said the same thing about steak and chicken!
also the area of the charbroiler was smaller than i expected.
i had a 900 cfm vent hood [27"deep] installed 36" over a pro-style rangetop -- i loved the height because the hood wasn't between me and the pots. i did have to use regular light bulbs in the back sockets meant for heat lamps. the front lights would shine in my eyes otherwise.

Well, the Wolf product specialist said that they don't mean that a flammable hood that has a steel liner has to be 44" over the cooktop. He said that's too high for good capture. Duh. But I had my husband read the Wolf instructions and he read them the same way. Maybe it's like the instructions to take the fat and skin off meat for charbroiling!

In looking at photos of range hoods between windows, I realize that most people arrange the bottom of the hood to line up with the middle of double-hung windows, so that it reads like a line across. In our installation, that puts the bottom of the hood around 36" above, which seems right.

You might consider a stainless steel trim on the bottom of the wood, extending up over the liner on the inside and extending up the outside an inch or so. This would be less visually intrusive.

Wood species that are difficult to burn include redwood and ipe.

Dimensions given by oven/hood manufacturers are usually examples derived from "one size fits all" generic building codes. In your case it would be very important to determine exactly what the local applicable codes allow and then work from there. Given the wide range of code approved decorative and fireproof materials available that can be used to simulate or protect any design chosen, it should be possible to at least get very close to the hood you want. Makeup air and heat exchanger function could also be a necessary part of such a large airflow demand.

I have a wood hood over a 48 inch BlueStar with charbroiler. The wood starts at 32 inches above the range, and the stainless insert is 39 inches above the range. I never trim any fat off anything, I grill chicken, fish, vegetables, steak, everything, I do a lot of wok cooking and I have never had a problem with smoke capture.

I have a 48 inch BlueStar with charbroiler and a wood hood (27" deep and 54" wide). According to the range spec a wooden hood has to be installed at least 36" from the range top. My inspector looks at this and then measures the distance from the range top to hood. If it's lower (even only 0.5") he makes you move it. I'm not sure your inspector will be that critical.
