mud job vs. kerdi

I'm having a hard time finding a tile setter that's heard of kerdi. Most mention redguard.

I found one guy that specializes in mold remediation (cuz I have mold and water damage) and he does mud (paper, chicken wire, mud, thinset, tile -- reguard in corners I think). He says he's been doing it 10 years and hasn't had a failure yet (keep in mind, he also does mold clean up!).

Is another waterproofing barrier needed with a good mud job? Would kerdi over this be overkill? Which is better? A good mud job or kerdi? Should I consider using this guy?
