Steve, I don't understand why you are using trellis's. None of the herbs you have have vining tendencies. If you are using the trellises for support, I'd recommend trimming back the plants instead to put more energy into making roots and filling out the plants themself. If you don't mind what the pots look like think of recycling 2 liter soda bottles, gallon jugs with the tops cut off or anything slightly resembling a gallon size pot and poke 4-5 1/4" or 1/2" holes in the bottom for drainage. If you have a recylcing center near by I've never found one that doesn't mind you going through it for containers (this is from experience) and they are free. Yard sales are another great source of cheap pots, I just bought a barrel, square plastic patio container and a 3 gal foam planter for $3 (don't be afraid to bargain...they were asking $5 for 2 of the pots and got them for $2. But do save your money and use a soil less potting mix preferably without fertilizer (the fertilizer washes out after a couple of waterings anyway). Daisy, I disagree with keeping the soil permanently moist. This may be so until and only until the plants are established, once the roots have developed enough that the plant is thriving allow to dryout between waterings. Many an herb has died from over watering, herbs prefer the soil to dryout between watering.

THough time consuming, these are always a fun addition to a tea party..... DECORATED SUGAR CUBES 1 egg white 1/ 8 tsp cream of tartar 1/ 4 tsp. almond extract 1 and 3/ 4 cups confectioners sugar food coloring Combine egg white, cream of tartar and extract. Blend sugar into mixture. Beat until icing hold stiff peaks. Divide and tint with coloring. Cover until used. Makes 1 cup. TO MAKE FLOWERS OR FRUIT ON SUGAR CUBES: With decorating tubes: Squeeze icing through small tips Without tubes: Double heavy waxed paper; roll into cone. Cut tip for small opening; squeeze icing through opening ********************************************************** Petit Fours Now to bake the cake, no special cake pans are required; a 9 inch round or square pan will work just fine. When the cake has completely cooled, cut it in half horizontally. A serrated knife works well for this; gently saw your way through. Brush the liqueur over the cut sides, and then fill with a thin layer of jelly. Heat the jelly until warm; this will make it easier to spread. A creamy filling sprinkled with chopped nuts is also good. Try: Almond Filling Chocolate Meringue Frosting French Buttercream Lemon Jelly Filling Chocolate Fudge Buttercream Frosting Mint Buttercream with Dark Chocolate Glaze The simplest decorating technique for petits fours is to glaze the top of the whole cake, and then cut it into shapes. A white chocolate glaze or fondant frosting works well for this purpose. Both will dry to a smooth surface. Score the top into squares or diamonds, and decorate. Cut the cake only when ready to serve; since the sides are left uncovered, the little cakes can dry and become stale in a very short time. To cut, dip a serrated knife in hot water and then dry it. A hot knife will cut through the glaze more smoothly. Cookie cutters with simple shapes, such as rosettes or rounds, as well as petit four cutters can also be used to cut the cake. These should be used on the unglazed cake. Each cake is then decorated individually. It is important to completely cover the exposed surfaces with glaze or fondant to prevent drying. Quick Pour Fondant Icing Quick Pour Chocolate Fondant There are innumerable ways to decorate a petit four. One way is to simply pipe designs with melted chocolate or tinted decorator frosting. But don't limit yourself. Candied citrus zest, crystallized edible flowers and leaves, and fresh berries are all excellent decorations. You can also use miniature cookie cutters to shape marzipan or rolled fondant. Add these finishing touches before the glaze or fondant sets. Decorator Frosting Best White Icing Ever To get you started on your petits fours adventure, try some of these combinations of cakes, fillings, glazes, and decorations. Before you know it you'll be the host with the most. White cake, strawberry jam, poured fondant, and tinted marzipan animal cutouts for a children's tea.  Genoise, amaretto liqueur, almond filling and a sprinkling of chopped almonds, white chocolate glaze, finished with almond slices and piped melted chocolate for an elegant ladies and gentlemen's luncheon.  Pound cake, maraschino liqueur, cream filling, poured fondant, and small pastille candies for decoration to serve at the bridal or baby shower. There's a combination for every taste and occasion. Ruthanna, you might like some of these ideas from the Chapter titled - "The Tea Larder": Tea Trimmings A bit of milk, some sugar - one lump or two - these are the traditional partners for a cup of tea. But it's fun to experiment with a few variations on them. A nice, easy sweet-tasting tea sandwich I've had is made using a can of brown bread (with or without raisins) sliced about 1/4 inch thick. Spread a slice generously with softened cream cheese and topped with another slice of brown bread. Cut into quarters and stack on a pretty plate.

I've eaten dim sum in NYC, Boston, Philadelphia, Los Angeles and San Francisco. I was thrilled when a good dim sum restaurant opened in the neighborhood in Denver that has a high proportion of Asian residents, Chinese, Thai, Vietnamese, and Laotian. Our Japanese residents are mostly in the downtown area with Korean citizens living in both areas and in one of the suburbs, there are some very good restaurants in all these areas along with some very good Indian restaurants but good dim sum was lacking for many years until a small family restaurant in the Denver Asian area, there are long waits on the weekend days, Then about two years ago the same family opened a second restaurant, much fancier than the original, about twenty minutes from our home. The dim sum is just as delicious with a greater selection, on carts or to special order from a list, and the restaurant is very beautiful with large round carved dark wood tables as well as smaller rectangular ones, a very large live fish tank you can select from and beautiful etched glass panels dividing the space. I'm sure a lot weddings and special events are held there. A large raised area at the end can hold three round tables for 10 guests each. Not only is the food really good, the atmosphere lovely, but the family has also managed to maintain the same friendly and good service that is at there original location. No tea ggs though, maybe they are not a dim sum dish. But they are still on my to try list. If it's 7 A.M., the temperature is below 20 degrees, I'm waiting for an outdoor auction to start and the only hot beverage they have for sale is coffee, I'll have a cup of it - black. Otherwise, I drink tea, hot or iced. My favorite of many decades is from a tea/coffee shop in our town. It's a full-bodied loose black tea called Russian Fancy, not to be confused with that smoky Russian Caravan. Another workhorse tea at our house is Twining's English Breakfast, which is great for making iced tea by the pitcher. For flavored teas, I like Black Currant and DH likes peach but we both enjoy Bigelow Constant Comment, which I think is a good value. Herbal tea is usually mint. Growing up, we never had dessert right after dinner except on holidays but every night after we finished the dinner dishes and cleaned up the kitchen, we'd have a cup of tea and a treat like cookies or nut bread. I revived that custom and we look forward to it. Most of you know that my best friend and I love to visit tea rooms and they have certainly enjoyed a revival throughout the eastern states in the last few years. I also have a lot of tea paraphernalia and entertain friends with tea parties. On Black Friday, I will be hosting a "Shop until you need teatime" open house like I did last year.
