White Subway tile to ceiling-Crown Molding??

I searched but could not fine this exact issue :)

We are adding a 9x20' bathroom with a "neo angle" 5x6 shower in one corner. The wall tile is white subway and the ceilings are 9'. Right now the CROOKED! subway tile which they are fixing goes all the way to the ceiling which we are liking. The ceiling is a bit unlevel so the top tiles are not looking right so far.

My questions are:

Should we tile to crown molding at the top (which will be in every other part of the room/house)?

Or should we ask them to tile to the ceiling and make it as straigt as possible with no trim piece (don't think trim piece is possible with this)?

Does anyone have pictures of either that they would share? We are having a hard time finding any!

Any advice would be much appreciated and listened to! Thanks in advance.
