South Texas is very hot country for a greenhouse. To make it useable you will need an evaporative cooling system and shade cloth like 40-50% aluminet. I guess my question is what are you growing that needs a greenhouse? I can see a structure to avoid freezes in winter. But what needs covering in summer? I'm growing all kinds of fruit in a greenhouse in west TX at 4500ft elevation. So we're much cooler and lower humidity. This makes a useable greenhouse but only with evaporative cooling, wet wall opposite exhaust fans, and shade cloth. In your climate the best greenhouse will still be 100F in summer and freezing in winter. Mine 32ftx54ftx16ft and covered with inflated double poly still falls to outside temperature at night unless heated. Mine benefits from covering in summer because our rainy season would rot the stone fruits. It also excludes hail, wind, birds, etc.

We are planning on using the same model. We debated about the CB, but have decided that it will be a HUGE assist to us in the new kitchen. Yes, it has only one heat (very hot). Have you been to one of the Wolf demo dinners? They are a great way to see the product in action. There are always grilled veggies from the CB. If you can find a demo in your area I would highly recommend going (free, great food, nice wine!) for the opportunity to speak to a chef. Granted, it is a lot of PR, but useful PR. We spoke with a Wolf chef at yet another product demo at PC Richards here in NY (I imagine they do them lots of places). I asked about the CB, specifically about the heat setting with things like chicken on the bone, thick steaks, etc. He said that they always sear on the CB and then stick in the oven to finish cooking. We have been doing meats that way with the old kitchen and prefer the results, so the CB will work for us. I expect to do lots of veggies too. Good luck--this is a "hot" topic on GW with very strong feelings on both sides. Another personal decision.

Each shelf has a pair of glides that it fits into. Both shelves and glides are removable. It is possible to disassemble the interior into a pile of shelves and a pile of glides. I found the glides for shelves and wine racks to be nearly indistinguishable, but not fully substitutable between shelves and wine racks. So keep the racks with their glides, shelves with their glides. Otherwise, either set of the correct dimension will work in a given unit. The Signature unit is quieter than the computer I'm typing this on in the same room. (The computer case has several fans, but most run at reduced speed.) In the dead of night if distant from both I can usually barely detect whether the refrigerator or wine reserve is on. Neither would likely interfere with someone falling asleep in the same room in a comfortable chair (I attest). The Signature is quieter than my SZ 632 48-inch refrigerator/freezer, which I can just hear at night when near it. Then again, the SZ is more than four times the volume. I'm not sure I can think of a good argument for paying the cost of most anything. In this case, one gets a lot of stainless steel, apparent high reliability, good control of temperature, US made (not sure about the electronics parts or motor), and, if needed, a telephone answered by someone trying to be helpful. I guess if an aphorism is called for, then I would submit that one may get less than he pays for, but almost never more than he pays for. If an economics view is called for, then I would submit that most of what we call money is actually credit, created mostly by the Federal Reserve System out of thin air, and subject to embezzlement (inflation), extortion (taxes), and now in vogue, confiscation (bail-ins). So if you don't want a pile of gold decorating your room, why not buy a Perlick and have your own Ale Reserve System? :) kas

Keeping an even temp' while ventilating will get expensive if it's even possible where you live.
