What do you cook in your convection microwave?

For those of you who have convection microwaves - and like them - what do you convection-cook in them?

I've read through alot of the posts related to convection microwaves but am not finding the answer to this question.

I ask because I plan to put one in my new kitchen but I don't know yet what I'll use it for!

one pan of cookies, banana bread (one breadpan), a cake pan with some fish in it for two people, couple of potatoes, oven fried potatoes for 2 or 3 people, a few rolls, one 8" cakepan with a favorite chocolate cake recipe, any time I want to cook something small and it seems silly to use the big oven. Haven't tried doing bread only because I normally do 2 loaves at a time.

I wasn't sure how much I'd like it but somebody suggested that it makes a great second oven and she was right.

Wish I could find a 11" or 12" diameter non-stick cookie sheet to use in it because the metal tray on which I can put food directly has a groove about 1" in from the edge.

As trekker said, pretty much anything that I'm baking in small quantity. I also use mine a lot for keeping food warm (I don't have a warming drawer), as I don't always get everything done at the same time. I have also used the proof setting when making bread. I have the Advantium 120. It just so happens that the convection is broken at the moment, and I can't believe how much I miss it!

First I work in a deli and use a high speed commercial Blodgett convection ovens also use induction ranges. I cook at home every Sunday a large enough meal to feed 4 for the week, even though my daughter is as thin as a toothpick my son more then makes up for it (now 6.4" about 240) I've had the advantium for close to 20 years at home, my first was the 120v. It was a nice speed cook, a little weak microwave (only 900w) but general cooking times were much faster then conventional/ convection oven, especially casseroles, lasagna, scalloped potatoes etc... worked great! My oven was the Jenn-air, but I found to be too much to deal with cleaning to use any of the accessories Grilling frying etc, so it was really a waste of money in my new home I just have a convection oven with my Advantium. When I moved I added the Advantium 240v. even faster cooking, 1100w microwave & many more auto selections. I use my toaster oven for pizza, comes out a little better and my toaster oven is also convection so only takes a few minutes longer. The only time I use my lower oven is for holiday cooking turkey, or large roast, but even a roast alone I just use the Advantium in convection, I'll sear in large pot w/shortening, then convection in Advantium. The Advantium will sear but hot oil is faster method, and wont start cooking the meat, also searing gives off a lot a splatter. Same for steaks the splatter not worth it, a mess to clean, I just sear in pan on stove then auto cook in Advantium. I'm about to replace my Advantium (mines getting worn out). I don't think there is ANYTHING out there as flexible as the Advantium!

Tracey, if you are limited to the GE Advantium be aware that there is a 30" 240v version and a 27" 120v version. They are not identical. Make sure you understand the different features. The Miele speedoven has a broil element. I think only one of the GE's can broil and I'm not sure if it uses a conventional element or quartz lights. I don't own either one so don't take my word for it, just be sure you and your builder know which one you are talking about. Of course for the 240v version the electrician will have to run another 240v circuit in addition to the oven circuit. I plan to get the E'lux Icon speedoven when we replace our wall ovens. The E'lux is more affordable then the Miele, but it doesn't have the broil element but that is okay. And of course the e'lux won the infamous baked potato race so hey... gotta get it!

I took a little course put on by the Wolf distributor here ... it was very informational. They didn't recommend using straight convection for anything that has much of a side on the pan, because the side blocks the air circulation, which is how the food is being cooked, so the top will cook faster than the inside. But it's fine to use convection with cookie sheets and broiler pans, or at least try to use the lowest side available. Also, don't cover food if you're using convection. They recommended convection bake for pies, not straight convection. And, if you are using straight convection, flavors will not transfer (eg, it's okay to bake a tray of bacon-wrapped scallops on one rack and cookies on another). They also said to turn down heat 25 degrees and reduce time 20 to 25 percent with convection, which matches what I've heard elsewhere. Here is the percentage of oven element used for each mode (this is for Wolf) Bake stone = 40% broil, 60% stone Bake = 10% broil, 90% bake (the hidden element on bottom) Convection bake = 90% fan, 10% bake Broil = 100% broil Convection broil = 100% broil, 100% fans Roast = 25% broil, 75% bake Convection roast = 25% broil, 75% fans Convection = 100% fans

We are in the same boat. Have no respect for the microwave and have always selected by size/fit first, then carousel, then power. Like you - we never cook in in the microwave and can't understand the market for those microwave cooking gadgets. The digital display on our Sharp has been dead for ten years but since we only minutes+, it doesn't matter. We are replacing our counter and doing a few other upgrades and I'm looking at getting more out of that microwave counter space. The convection/mic combo is intriguing but there is not a lot of hands on feedback re: the cooking aspect of the counter units. We have double ovens that we use a ton, but if we can use one of these units for smaller items, and quick turn-around, with good results, then it is worth the counter space. I'm looking at the Samsung MC12J8035CT 1.2 cu. ft. Countertop Convection Microwave at this point and like you, would love feedback on the cooking results of these types of units. The power output of the Sammy 'seems' pretty capable. Thanks.

Lindawink -- you have a "proof" setting? I wonder if the "warm" setting would work. I have a warm/reheat feature. I'll play with that. I have the Kenmore Advantium 120, so it's got to be similar to yous.

One thing you might consider is that for microwave you use the glass tray and for convection or speedcook you use the metal tray -- I'm assuming that all units work as mine does. As it happens, I have a tall narrow cupboard that is the perfect place to stow the tray (glass or metal) not in use.

I also use mine for many of the same things as the big oven and I especially use it on holidays as a second oven.

Trekker, yep, the proof is located on the same button as the "warm" button. I have the GE profile.
