Will my indeterminants come back if I cut them down?

To those who live in warm climates like in Southern California: will my indeterminate varieties regrow if I cut them down to a 2 ft bare stalk?

Earlier in the season, I had an unfortunate accident of snapping the top off a San Marzano. With the confident words of some fellow tomato growers here, I left the headless San Marzano alone to grow even more vigorously as before. So I'm thinking, what if I cut off the wild spent growth and see if it does the same thing.

Thoughts?
