Unexpected Beetles

So I was moving around stuff in my pantry yesterday and happened to take a look at me long-forgotten mealworm bins. I had long ago sifted out every last crawly to feed to my Blues - or so I thought. There were three big black beetles in one of the bins, very much alive. Given the difficulty getting mealies this summer, I'm considering keeping these guys around. Anyone know if three is enough to produce a batch of new ones? Do they need anything food-wise other than the meal? Should they go in the fridge again?

I'd be much obliged to anyone with experience or suggestions.
