Just because fresh poop 'burns' grass does not mean it's acidic. It's the highly soluble nitrogen that burns plants. This is why we compost it, to get that N converted to other forms that aren't as hard on the plants. Having said that, it may indeed be acidic, I don't know, but it would be in the form of weak organic acids (think vinegar) vs. mineral acids (sulfuric, hydrochloric, etc.). Organic acids decompose in the compost and the product ends up neutral.

This is what we call 'Goose Bean' (aka Estill County Bean) here in E Central KY (located probably 45 min drive from Bill best in Berea). I'm 58 and my Dad and his neighbor were growing this variety as long as I can remember. Last time I grew them was probably 2001 - 2002 maybe? (man time flies). Anyhoo, these seed have been vacuumed sealed and kept refrigerated for at least a decade now, I think I'll grow them again for 2013. The photos showing the pink coloration of the mature pods are exactly what these look like at that stage. The pods stay tender and good to eat, we love 'shelly beans' pods and all.

I have a tall faucet (Danze Sirius) in my half bath, it goes into a shallow vessel sink (Porche Zen sink), and my townhouse has a lot of water pressure. The water does splash, but I think it would splash less if the plumber had installed the faucet closer to the sink, so that the water stream led directly to the drain. Right now the water stream hits closer to a slanted edge of the sink. However, I get innumerable compliments on my half-bath and the "cool sink and faucet". And even though I have everything wrong - too tall faucet, too shallow sink, too much water pressure, poor faucet placement - the splashing is only moderate. So I think you are right to look at sink size and depth, but I would also make sure that your plumber or contractor (or you!) installs the gooseneck with a proper alignment to the sink as well.
