Tip Pruning Tomatoes

I have been lucky enough to be given a community plot to grow my vegetables this year, and I am very excited! However, they have several restrictions, one of them being that no support structure can be higher than 5 feet tall. I have started the seeds of several heirloom varieties (Nepal, Brandywine, Beefsteak, Black Russian, Cherokee Purple)and a couple of hybrids (Celebrity, Sweet 100. I'm wondering if it would be o.k. to pinch the plants when they reach the 5 foot mark. I've read that some of the above will reach 7 or 8 feet. I have pinched at the end of the season to concentrate ripening of existing fruit, but never in the summer. Will these tomatoes have time to set fruit before reaching the top of my supports? This is my first year growing heirlooms and I don't want to mess it up.
