Rooster Sauce - my latest experiment

Found this recipe on the net for Sriracha and since I had some Habaneros I tried it. Compared to a commercial sauce this recipe is missing sugar and fish sauce - next time I will play with the addition of those ingredients but aside from consistency issues and a lack of complexity in flavor it's pretty darn good!

Sriracha

1/2 jar of peeled garlic cloves (I should have measured the capacity of my jar but it was a little larger than a pint)

Fresh Habaneros (I used 2 large)

Dried red chilis (I used Thai - oops should have counted how many - maybe 12?)

1 Tab Salt

Vinegar

Dump the ingredients in the jar and add 5% vinegar to cover (ran out of 5% and topped off with rice vinegar). Let steep for a week or so then pulverize in blender or food processor until smooth. Refrigerate. Well, I used a food processor and never got the smooth consistency I was hoping for but it's tasty!
