What recipe?

2 c Hot peppers, any kind
Olive oil, extra virgin
1 Garlic clove, chopped (opt)
6 Drops lemon juice (opt)
Cook the peppers, put them in the jar, add more oil then done......
We had a friend send me a recipe but it was for pickled peppers and we like the hot peppers in olive oil for snacking.

Not sure, but I think you are supposed to cook the peppers IN the oil. I heard on Emeril (Food Channel), that you heat the olive oil to 160f degrees, add the peppers, and stew for 10 min. This kills botulisum(sp) and allows the peppers to release their essential oils, (read capsasian(sp) ). I made garlic oil this way, and its very good, IMHO.

That is the recipe I followed and the oil had no flavor. I want to dip bread in the oil and just can't seem to get it flavored. Any other suggestions????? Thanks!!!!

1. you have to cook it for awhile, kind of let the chili peppers stew in the oil. it works better with a hotter chili instead of a mild one and it works better if you cut or chop the chilis up somewhat.

2. this item would have to be refridgerated unless you are straining all the particle matter out of the oil. It is an excellent medium for botulism and there have been lots of cases where people have gotten sick from homemade whole garlic cloves in olive oil. 160 degrees is not hot enough to kill botulism toxin and spores and they love an anaerobic environment which the oil provides.

3. try posting this recipe and same question in the harvest forum. many people there will have lots of tips for you. it is an excellent forum.
