Ripen Peppers Fast

I just accidently found this on the internet and wonder if anyone has ever tried this to ripen his peppers. This would seem to be an idea to try at the end of the season when lots of green peppers are harvested because everything is freezing out. Maybe someone can try it soon and see if it works. Please let us know how it turns out. here is the quote.

Fruit produces ethylene gas as it ripens, and the presence of the gas increases this process. Bananas produce a lot of ethylene gas as they ripen.

You can use this to your advantage though.

Once my chillies have stopped getting bigger, I chop them off (this will also induce the plant to make more chillis). I place the unripe fruit in a paper bag with a ripe banana and they ripen in just a few days.

all fruits, even hot peppers, produce ethylene when they ripen

gas ripening is why grocery store produce tastes like plastic. its harvested at the breaker stage and ripened while its in the distribution pipeline.

i'll hang my plants upside-down and let them ripen on their own, thanks...

Or bring the plants inside and they will ripen on the plant with very little light

I normally air dry mine but a couple of years back the question came up and we ran an experiment where I sent seeds from several varieties of dehydrated peppers to several folks. These peppers had been dried without regard to saving seeds. Most samples got some germination, some got 100%, and some got none. I attributed the difference to the heat at which the various peppers had been dried--I had not paid attention to it. At present I am drying some of my small peppers for seeds in the dehydrator ( set at 100 degrees)-- so much easier than trying to get the seeds out of those little pods. John

I placed most of my green peppers in my house with 69-71 degree temps, but left a few dozen green ones in the garage with temp fluctuations of 38 - 65 degrees. The peppers in the garage ripened faster AND didn't start to degrade as fast as the ones ripened in the house. Fuzzled me it did. TiMo

My tomatoes went in late so not much besides gold nugget and Kotlas ripe yet. 2 yellow Atchyoka, 2 Black Russian. There are maybe 50# that need to ripen yet. Most will have to ripen indoors I am afraid.

You can't "speed them up" so you just leave them on the vine/plant as long as physically possible and hope the weather cooperates to give you the time needed. You can always cover/protect as needed to delay harvest. But harvest only when the weather makes it absolutely necessary - not by when it is convenient. For pumpkins that is when the vines are good and dead. For peppers, just as with tomatoes, you can pull up the whole plant and hang them upside down in the garage or basement and they will continue to slowly ripen. Dave
