Its sunburn. A pepper that is left in intense direct sunlight for prolonged periods will blanch white.

Ideally if you want to sun dry peppers, you cut them in half and put them in an enclosed solar oven (the dash of your car with the windows rolled all the way up works nicely).

Just leaving them out in the noon sun in 80 degree weather isn't really going to dry them.

well heres the thing. I have a great dehydrator, but i used it in the house drying Habaneros and my Wife beat the crap out of me, because the house wreaked of pepper fumes making our eyes water and caused a severe cough. So, what am I supposed to do when air/sun drying?

as Edymnion said you should cut the pepper in half so they have good ventilation not so much of heat drying because that will cook & kill the germination rate of the seeds .... if your looking to save some for next year . best bet is to half them leave seeds intact put in a shaded spot like under a table or such and if you decide to use a dehydrator use one that has a temp setting as it will still give good air flow and also not over cook your seeds .

Actually pepperguy, with both of those types of peppers, you can leave them fully intact at room temp or maybe a toaster oven in your garage at low temps(100-150) and they'll dry out eventually just fine. It's the thicker skinned types like jalapenos that you MIGHT have rot at room temps. Like edymnion said, a car dash or hatchback will expedite the process.

80-85 temps is bad news for a confined pepper with no proper air flow for sure if you plan on saving the seeds for next years planting .....first before dried your pepper will wilt ...and possible start to rot causing mold within the pod the seeds if not damaged from the mold will be damaged from the extreme heat .

If you don't have an ideal pepper drying situation, when you slice the peppers in half, remove a few seeds then. Dry those seeds in the shade.

Here's the solution.....bring the peppers back in, put the wife out in the sun. ;-)

Put them in the shade outside rather than the sun. Or, bring them back in the house and put the dehydrator in an unused room with a window (that's what I do). I don't even open the window most of the time, just close the door.

Do what I do when I dehydrate my bhuts, run an extension cord outside and leave the dehydrator on the back porch.

hahha I love all the solutions and Ill take them into account. Ive already saved enough seeds from my Habs for next yeaer, as well with my Long Cayenne so I was just hoping to dry them out in the sun fully. But ill definitly try to cut them in half and see what happens, hopefully those peppers arent ruined.

Yes, I was going to suggest running the dehydrator on the porch, too. I have to do that when dehydrating garlic also or the husband gets worried that the garlic smell will never leave.

If the white isn't from a fungus, then yes. But give them the nose test first.
