pepper novice with pix and ???

Hi. Succeeding beyond my wildest dreams growing peppers. A couple of questions though. What fertilizer is best? I have kelp or tomato fertilizer or annual flower fertilizer available. Second question is: on the piquillo plant, most peppers come out green...but one came out red....do peppers change color over the season? And that red one, I grilled it and dang, that was beyond tasty!

Here's pix of my crop. The one tag that you can't read is AFI Norteno, and the one plant with the twisty peppers I have no idea of the variety...I do know that they are some real hot peppers though. Any idea of that variety by looking at the pic? Thanks for any and all comments.
