peppers sweet and hot!

Someone told me years ago that a red bell pepper was just a green one left on the vine to ripen. I tried this and all I got was green peppers that rotted on the vine. This year I purchased some red pepper plants. these are called Blushing beauty and are supposed to "blush from a pale creamy yellow to a bright red. So far I have the creamy yellows and they are getting big! I am afraid to leave them on the vine because of what happened before. They don't seem to be turning red. Has anyone had these? How long does it take? Can they be picked as pale yellow and as red also?

Second question: Hot jalapeno peppers- I have read on these forums that you can pick them green or wait until they go red, all depends on your taste for heat. Can I ask, what everyone does with all their peppers at harvest time? Whether you grow sweet or hot-or both?
