Smoked Paprika

I know that normally you would smoke the whole pods and then grind them to powder, but is it possible to smoke already powdered paprika?

I've read you can smoke rock (kosher / canning) salt so why not try dry paprika powder? Give it a shot and let us know how it works out.

I'd spread the powder thin, keep the temp at a cold smoke level and give it 6 hours to start.

Yes I think you can BUT you will loose a lot more flavor in the process. It is like roasting coffee beans. You wouldn't want to roast raw ground beans. JMO

I have, Christine, back when we switched from one to the other and again comparing what my MIL bought from Penzy's to what I bought from TSH. The dried herbs are about equal, but I prefer TSH's cinnamons, coriander, cardamom and blends, especially if the blend contains salt. I can always add more salt myself. I think the only thing I wasn't satisfied with was the Japanese Seven Spice. It's ok, I just haven't figured out what best to do with it yet. As I posted on another thread, I am hooked on the smoked paprika on popcorn. I also use it on potatoe wedges, eggs, in potatoe salad and on pork.

I've saved both recipes. I figure I can leave out the salt in both the rub and the sauce and then use Heinz No Salt Added Ketchup in the sauce. Thanks! I was looking for a homemade barbecue sauce to use. This looks like it packs enough flavor that the salt won't really be missed. Sue

That's amazing, congratulations. Thanks for sharing the recipe. Along the lines of "I'm your cook, not your nurse", my XH, the cardiologist, used to accuse me of trying to kill him whenever I served anything with beef. I assured him that I certainly wouldn't be that subtle or slow about any attempt to do him in. Apparently, he now eats beef wrapped with bacon, served by wife #2. Man, I don't know how I missed this Thread! Glad you bumped it back up, Bruce! Isgen, your chicken and bangers turned out great. Soon I'll have smoked paprika again...can't wait. Bruce, all I did for the Hungarian paprika was smoke the peppers, then did a final dehydration. After that, I just ground the peppers into powder. Let's see some pics! I'm going to harvest a few Hungarian's, too. Josh

Thanks ottawapepper and seysonn. I'll give it a try using the coldest smoke I can get. The trouble is although there are a lot of hot smokers available here (New Zealand), I have not yet located a cold smoker.
