Mild to Hot Pepper for eating fresh or stir fry?

I'm not real into cooking much with hot peppers (don't like salsa) and I don't know how to go about pickling, but would like a Pepper that I could eat raw, sweet with some hot flavour. Some contrast to the sweet bells for raw sweetness fresh from the garden.

what I've seen so far...

Pepperoncini? Bought a plant this year, if i let them ripen red will they be good to just eat raw?

Aruba? A Cubanelle type. I read some places that it is just sweet, but some that I have read said it has some spicy flavour also.

Medium Hot Block? I've tried this years ago and thought it was just kinda boring hot and not much else, maybe I could try again

Hungarian Banana Peppers Hot or Sweet just seem rather boring to eat fresh.

The rest I see for sale are typical hot types.

Open to learning and trying or re-trying things. Thanks.
