What next for overwintered peppers?

I have a bunch pepper plants in various size containers that I have overwintered. They have no leaves but the stems are still green so they are presumably alive. As I have never got to spring with a living pepper before and I had some questions. Do they need to be hardened off like seedlings or can I just put them out? Would 50 degrees at night be acceptable?

The biggest question I have is if they have no leaves to transpire how do I water them so that they do not die from too much water? That is what happened to some of them when I brought them in last fall, the soil was soaked and I cut off most or all of the branches and they died. Similarly if it were to rain would I have to cover them so they do not get too wet? How long does it normally take on average to see signs of new growth?

Any insights into the process is much appreciated.
