Overwinter pepper plants starting to sprout - what to do??

Hello all,

I have 2 Serrano pepper plants that I severely pruned top and roots and placed into one gallon of potting mix to overwinter inside. Both plants have small shoots beginning at the bottom of the plant. Should I rub these shoots off?? The plants are in a western window in a room that is about 65 degrees. Should I move the plants to a place with less light and cooler temps??

Any help is greatly appreciated.
