off topic fried chicken

I know this has nothing to do with gardening, but I figured it would be a break from complaining about the rain.

I cannot for the life of me make decent fried chicken. I can't get the breading to stick. My mom used to make it nice and crusty and crunchy with lots of breading on it. Mine always looks more like a breading you would find on catfish. Real thin, and usually falling off. I just use flour salt and pepper (what she said she used--wondering if she was holding out on me?), and fry in a cast iron skillet (of course) over medium-high heat. Unfortunately, it's an electric stove instead of a real flame.

Any of you cooks out there have any advice?
