Freezing Sweet Potatoes Today

When the weather got hot I quit baking anything in my house oven and started using my "summer kitchen" (a crock pot, air oven, and electric skillet on the front porch). That means I haven't cooked as many of last fall's sweet potatoes as I was when the weather was cooler.

Today I pulled a tray of them from under the bed where they've been stored and pulled all the sprouts off them, cut them into consistant sized pieces and DH heated the grill to 250 and started them cooking. I'm just letting them cool under the AC and when they are cool, I will peel them and put them into bags for the freezer. Then come fall/winter I will make sweet potato pie, bread, candied sweetpotatoes, etc.

I was surprised at how well they had kept. I ate a few slices raw and even though they had grown sprouts, the taters were still quite firm and sweet. But note to self. 200+ lbs of sweets are more than our extended family eats over a winter.
