Trimming 2nd thru 4th year plants

I'd like advice on this, how to best trim older plants.

Some have minor frost damage on tops. Some are starting to send new shoots now at upper nodes. Generally there is a very short fruiting season between now and end-April when temps get too warm for fruit set.

In past years I've had plants frozen to ground with re-growth success, but chopping off entire main stem seems too risky and also may push the short fruit season.

Where should I trim, how many nodes up? Should I thin plant as well, that it take out some lower internal crossing branches?

Some plants have small immature fruits on them still (that set during warmer spells during winter) near ends of thin branches. I hate to trim them off, but perhaps it is like removing fruit from a newly planted seeding, that it will help in long run.

Any advice?
