Globe Artichokes in VT?

Hello all you garden sages!

Artichoke was to be my trial veggie this year; put the seeds in moist peat moss in the fridge for 2 weeks; went out to plant them in my raised bed & WOW, what real estate hogs! I hadn't noticed! So, instead of planting the 12 I had germinating, I put in 6. Now, after doing more research I'm afraid #1 I won't even get a crop, #2 they won't overwinter.

As it is, they're in a raised bed; 2 across a 5' span and 3' apart (less than specified, but in my yummy raised bed soils I've always been able to plant things a tad closer together; so the 6 plants are taking up 10' of my 5' wide bed; that's a LOT of waste if the crop doesn't come... imagine the carrots alone you could grow in 50 sq ft!
