When I was doing my first try at grafting I was ordering rootstock from Raintree and called there with a couple of questions about technique and zone compatibility. To my surprise they transferred me to their resident horticulturist and she was very helpful (and obviously knowledgeable, not just a counter girl who was the "resident horticulturist" for that day). Call them, they might have all the info you need.

Pappu, I think that is a VERY appropriate theme for your garden! When I look at your pictures my heart starts racing, drool starts falling and eyes start twitching and bulging out.
