If I had several of each species, I would plant out some in the ground as soon as they are ready to move, or at least sometime this spring or early summer, and keep some reserves in pots. I think they'll grow faster in the ground and if they are in their permanent location you'll avoid future transplant shock. However, in the ground animals and insects may get to them, so a few in a pot as insurance are a good idea, I think. Make sure to build good trellises especially for the trumpet creeper, which is a long-lived, large vine that requires a sturdy support. I recommend at a minimum a 4x4 post sticking 5 or 6 feet out of the ground with 2 or 3 feet in the ground (start with an 8 ft post). The trumpet creeper can climb a flat surface, while the others need something to twine around, such as a fence, bush, strings, etc.

I don't have experience with Hog Peanut, so I won't comment on that one. Trumpet Honeysuckle is a great vine for your region - probably the least aggressive spreader of the bunch, and also probably nearly evergreen, which is nice in the winter. It is a twining vine that needs something of small diameter - like a wire fence, bushes, small pole, string, etc. - to climb. It cannot climb a shed wall. Virgina Bower does tend to be aggressive, I think. I have never grown it, but see it wild frequently. In my opinion it isn't as nice a vine for the garden as Trumpet Honeysuckle. I have a ton of Virginia Creeper here, and have never heard about the berries being poisonous. I wouldn't be concerned about the berries, which are a favorite food of many birds. Virginia Creeper is a little aggressive, as are most vines. Another choice I like is trumpet creeper - Campsis radicans. This is an agressive spreader, but has very showy flowers most of the summer and fall and attracts hummingbirds, making it a really nice addition to a yard that has roon for it. If the shed is surrounded by lawn or other open space where it will be easy to contain the root suckers of Trumpet Creeper, then it sould be my first choice. Another option is Carolina jessamine,which has yellow flowers in early spring. Also Cross Vine, which is another flowering vine. Jessamine is a vigorous, evergreen vine. Cross vine tends to be a little more sparse in growth habit, but is an interesting addition to the yard.

It's just in the genetics. The plant must twine to climb so uneven growth on the vine makes that happen. It's 'programmed' to shorten cells on one side. I came across this many years ago trying to get a sure method of telling the difference between Dioscorea bulbifera and Dioscorea transversa. Bulbifera goes clockwise whilst transversa goes anticlockwise. Through observation around the same time I found that most vines seemed to go clockwise. This was on a local level, in my part of the country. I guessed that would also hold for the rest of the world. The coriolus effect only works on huge bodies of fluid, such as the oceans and the atmosphere. It has no effect on a micro level. The old stories of water draining from baths or sinks going in one direction are a myth. Those amounts of water are far too small to be even slightly affected. And plants are affected even less.
