Winter squash thoughts?

I grow lots of squash for the winter markets and some wholesale accounts. The plants did fantastic this year and I harvested nearly 4000 pounds of delicata, kabocha, butternut, futsu and pie pumpkins..
I know that in time the starches convert to sugars and the squash will get sweeter, but i'm worried that it's looking like the same thing that happened last year is happening again.

Overall, the squash is not very sweet and wasn't last year even after storage. Due to the lack of sugars they also didn't keep all that long into the winter, even with decent storage conditions. Most of them did sell but I ended up composting more than I would have liked to.

I'm wondering if anyone here with more soil science than me knows of something that might be missing in the nutrient equation?
