When are Dry Beans Dry Enough to store?

Hi. This is my first year growing any sort of garden and I have already fallen in love with growing dry beans. (I've planted Jacob's Cattle, Orca, Adzuki, and a Black Bean)

My question concerns the Jacobs Cattle Bean. They matured faster than any of the other varieties. I let the pods get dry and brown on the vine then shelled them out. (I guess from reading more I should have picked the pods when they're yellow so more pods would be produced? oh well, live and learn) Anyway, I've brought them inside to finnish drying and put them in a strainer with plenty of holes and a shallow baking pan which i stir every day. But how do I know when they're dry enough to store? I read somewhere here (from gardenlad I think) that to tell you just hit one with a hammer and if it cracks it's ready and if it doesn't it isn't. Isn't that a bit of a Catch 22? If you hit it with a hammer, you can't eat it latter... :D So, can someone enlighten me?
