Making Infused Oils

I am so excited! I found a bunch of beautiful plantain in our pasture today, so one of my daughters and I picked a lot. I chopped it up coarsly, and put it in canning jars (one quart and one pint), and then added olive oil. I filled the oil to the top, and used my plastic knife (from canning) to get as many air bubbles out as I could, and filled it again. But, after capping it, I still see some little tiny bubbles every so often. Is this a problem? Is it absolutely essential to get out ALL air?

I am also very happy about this - we have a beekeeper nearby, where we are going to go to get a bucketful of honey. I asked them today about bee's wax, and they sell that too, so I plan to make some great plantain ointment with it!

This is my first herbal medicine making try!
