herb drying: dip in boiling water?

i recently saw a tv program on drying herbs and it recommended dipping herbs in boiling water for 5 seconds, then ice water for 5 seconds before drying to keep the herbs from turning brown. it struck me that boiling water might destroy some of the essential oils you'd want to preserve in an herb. if i don't dip in boiling water will my herbs turn brown? if i do dip will i lose flavor? so confusing!
