When to pinch off Basil? Sweet and Pesto Perpetuo

I'm growing two types of basil this year. Both are in large containers. The soil in the backyard, outside of the planter areas where I have mint, cilantro, lemon balm and chives growing, is just not good for growing herbs....too much clay. But both container basils are doing nicely.

The sweet basils are about 6" tall and the leaves are getting nice and large.

The "Pesto Perpetuo"s, a variegated, non-flowering basil, is about 8-9 inches tall and has a nice round shape, though the leaves are still kind of small.

When should I pinch the tops of these to encourage them to bush out? Is it too soon? I don't wanna top them off if they haven't had enough time to grow and establish themselves in their pots yet.

Last year, I let the sweet basil grow kinda tall and pinched before flowering, but wished I had done it sooner. They would have gotten much fuller with less stalk. I still had a nice crop of basil.

The "Pesto Perpetuo" basils I don't have to worry about flowering, so I want to pinch them off as soon as they are ready to start filling out.
