Success at last, now what?

I've had success at last with my herbs! Finally! I think it was the cool winter we had. I've got lots of basil and know I can make pesto. Anyone have a good receipe? I've also got dill, parlsey (curly & flat leaved), cilantro, sage, spearmint (isolated in a pot!), and a couple others who escape my mind at the moment. I'm afraid everything will die back when the real heat kicks in so I would like to trim alot of it back. What can I dry and how? And what can I freeze and how? Also, anyone have any other great use-up-a-lot of herb receipes like pesto?
