Need info on growing - using German Chamomile

I have 8 small plants that I grew from seed. I want to be able to make my own chamomile tea. REALLY need tips on where and how to grow: is chamomile annual/perenial in N. Tx: Is it the flower that's used for teas: best way to store/preserve whatever part is used for teas; other uses.

I grow rosemary, oregano, thyme, bronze fennel, winter savory and in summer, basil. Do any of these combine to make a good flavored tea? I use dried oregano and rosemary and chop them in a coffee grinder until almost powdery for seasonings. Basil could be added to this also.
