The point has been well made here about not only the taste, but also the surviability of various fruit varieties in different locales. For ex, you CAN grow an Apricot near Atlanta, but would rarely ever get any blossoms to survive the late frosts. There are so many variables that impact flavor and survivability. If you try GA apples, then a Carolina apple, then a VA apple you will see the differnce both in flavor and in how long they will store. Some of the old regional varities such as the original Winesap are delicious, but many, such as the Ben Davis, taste like sawdust and were grown primarily because they were hard as a rock and could stand up to the earlier, longer shipping methods. Too, the climate changes as do pest problems...hence GA and South Carolina having really fallen in the number of peach orchards. Rootstocks that will succeed in one part of the country would never live in the heat, humidity, and soils of the south. Mosty fruits rioen in accordardance with the climate, hence California North Coast Grapes always making far better Zinfandels than any you will find in the SE. Pears are notorious for fireblight in the south, which is why you so often see the rock hard Keiffer. Other than the Warren pear, few will thrive here despite the best of efforts. In NC, Lee Calhoun is an excellent resource, as is Jim Lawson IN Ball Ground GA. There are others. Just because an apple is an old variety, doesn't mean it is superior, but there are many old U.S. AND European Varieties. One beautifully printed guide is the classic...Apples of NY. The fun is in the discovery and the occasional failure. I discovered scrumpy and real hard cider in the west country of England, Perry in Normandy, and Kreik in Belgium. BUT, also lost an entire orchard of hand grafted trees due to my absence another year when a little beatle in NC destroyed everything. Here in GA, dug up some six year old dwarfs only to discover that there were no roots thanks to the GA clay and resident pests. If you want successful fruit trees in the south, you do need to spray.

For the rosemary I'd try to take cuttings now and get them rooted in pots before the move. Rosemary, for me, roots better in potting soil - just cut, remove lower leaves, and stick it in moist potting soil. If you have rooting hormone or some honey handy, you can stick the end of the sprig in that before putting it in the soil to help encourage root growth and inhibit fungus. I'd probably do a few because some may fail to root. Mint you can just dig/pot some up, or stick several sprigs water - mint roots very easily in water. While rooting, keep the cuttings in subdued light, like in the house near a window, or on a shaded patio until obvious new grown begins. Then they should be ready to be planted out - although if you're getting there July-ish(?) it may be a bit hot. If daytime temps there are consistently over 90-95+F, you might consider keeping your travellers in pots until fall when they'll have a better chance of taking root in the new garden.

Just getting back to the veggie gardening frame of mind... Last year I wanted cattle panels, but A) I'm too far from any source, B) I have no truck only a Subaru, and C) I couldn't picture bending and cutting what sounded like really sturdy material. So instead I got 4 x 7 foot concrete reinforcing panels at HD for $7.25 each. For me they worked great! I bent them in half the long way, so I could arrange them along a row in a sort of accordian-fold shape, with a tomato plant in every corner. I even made self-stakes at bottom ends so they would be somewhat stable, by cutting through the bottom wires and bending them down. That, and joining them together here and there, held the whole network of supports very well. I had 24 tomatos supported that way. Some of the larger ones would have grown taller, but for me, reaching up to 6 feet is high enough.

I never cut the roots unless there is something wrong with them because I'm afraid they won't react well to being repotted. I have a few pots where there isn't a whole lot of potting mix in them because roots and offsets take up so much space, and they seem to be ok with that. You will probably find a lot of dead roots in a planting that old though, so make sure you remove anything soft or loose that easily detaches. Beautiful flowers, by the way!
