More roots is good roots. They should fit in a one gallon pot. Cut them back to about 18" tall, and leave just one or two leaves (which it may shed anyway), water them well, and keep them in the shade till the show signs of new growth.

You say I should cut them back to 18 inches (that's probably not a problem as they are likely no taller than that, just in case...), but do you think it's neccessary since the roots will be almost entirely intact and already in soil? It turns out my pots are 3 gallon pots too, so they can hold a bit more.

The point of pruning is to balance loss of roots/stress with an equal loss of canopy/leaves. You can prune some, and not prune the others, if you want to experiment. Figs grow quickly, so pruning won't really set you back very much. You want to decrease transpiration (through leaves, etc) until water intake (roots) are up to the job. Putting it in a high humidity greenhouse is another approach to controlling moisture loss. It isn't a matter of technique, so much as balancing the water-in-and-out issue.

Well, I dug them up this weekend. Since these figs have been cut back year after year their root masses are just gigantic tangles knots near the surface. I managed to sever a few 1 inch dimaeter roots from the main tree that had 18 inch sprouts and small roots. One of them is severely wilted. I might just cut back all of the laves on it. The other three I took are consistently droopy but not getting better or worse. I take that as a good sign. The leaves are still firm, but hang somewhat downward. I figure it will take some time for them to get their roots sufficiently established. Thanks for all the advice. if thye live I'll let you know.
Also, I think they are Brown Turkey or Celeste. I still have a hard time telling the differnce.
