Digging up young fig tree

Here's my situation. My father-in-law has an old farm. He grew up with a fig tree that he says never had any fruit. I figure either they dropped or animals got them. I can't describe what they look like right now. So every year he goes to the farm and cuts them to the ground. They have suckered for many years and each year new shoots come up. I assume they are well rooted by now. I intend to dig them up and put them in gallon pots and take them home.

How extensive do you think the root systems are for each sprout and will they fit into gallon pots?

Will I need to take any special care to keep them alive?
