Homemade Fig Newtons

Fig Newtons:

First make a fig jam as follows:

Combine 1 cup of mashed figs, 3/4 cup sugar, and 2 tablespoons water. Cook until thick. Cool and use as the filling for Fig Newtons. (can be done in the microwave)

1/2 cup butter or shortening

1 cup sugar

2 eggs

1 teaspoon milk

1/2 teaspoon vanilla

1/2 teaspoon nutmeg

3 1/2 to 4 cups all purpose flour

1 1/2 teaspoons baking powder

1/2 teaspoon salt

1/2 pint fig jam

Cream butter and sugar well. Add eggs, one at a time. Beat after each addition. Add milk, vanilla, nutmeg and blend. In the first cup of flour, add baking powder and salt. Continue adding flour until the mixture is the proper consistency for rolling dough on floured board.

To make fig newtons: divide dough into 2 parts. Roll between two pieces of waxed paper, about 8 inches square. Remove the top layer of waxed paper and make an indentation with the back of a knife across the center. Spoon jam on half. Fold dough on center line. Cut into squares. Bake at 350 degrees F for 20 minutes until light tan. Cool on wire rack. Store in air tight container.
