I think I am addicted! Winter is coming!

I now have 45 little cactus beauties that I have taken through the summer, outside in hot and humid Georgia. I need advice as to how to handle watering (or lack thereof) in the fall and winter. I primarily have species of Mammallaria, Rebutia, Matucana, Lobivia, and assorted others: Ferocactus, Cleistocactus, Echinocereus, Astrophyton, and Trichocereus, to name a few. How should I approach watering this fall and winter? I am afraid that I may over-water and rot some of my cactus, and I surely do not want to do that. I realize I must over-winter them indoors. Please advise your time-honored strategies!
