The most likely reason that you're not seeing eggs and/or cats is that out of all those plants you listed, only two of them are butterfly host plants, the passionvine and the fennel - you might find a moth caterpillar on them. I'm not sure if p. alato-caerulea is a good one for gulf/variegated frits, either. Fennel usually hosts black swallowtail cats, which aren't yellow at any stage of their life cycle, so I don't know what the cats on your fennel are - if you'd like to know, we might be able to ID it with a picture.
I'd recommend that you plant some passiflora incarnata for gulf/variegated frits for starters, some hops vines and/or false nettles for red admirals and question marks, aristolochia tomentosa or a. durior/macrophylla for pipevine swallowtails, and rue for both giant and black swallowtails. All the plants I just listed are attractive, so they'll look good in your garden, with or without caterpillars.

Welcome, and congrads....you have done well so quickly. Remember the old adage, "if you build it, they will come".

Generally, there are different seasons for different butterflies. I think those yellow cats on your bronze fennell may have been an unwanted predator, as I got one earlier this year....you're looking for black swallowtail larvae, there are lots of pics on the web to see. I'm seeing mostly nextar plants on your list, which is a great start. YOu should have plently of visitors as the summer progresses. That said, you may want to look for butterflies common to your area, and search out the larval host plant. That's the secret...MAny of them are not widely available from nurseries, but are certainly easy enough to find. Milkweed,(monarchs), fennels(BST), rue/citrus (GST), passionvine-no red ones-GF's, ZLW's, VF's. These are definately in your area, and make a good start. Also find some pipevine and get it planted now for good foliage next year (PVS). The fact that you have lots of creatures and are going organic means you are well on the right path. There is a treasure of life already present, that will mesmerize you on a lazy Sunday afternoon. When I give BF presentations, I stress for the first 20 mins before I even talk about life cycle etc, the importance of just what you are doing. Welcome, lots of good folks here. Oki, so I know rue is a good one to have. I have bronze fennel and Citrus trees... however they are inside during the winter (I have a lime, tangarine, orange, and tangelo). I've heard that Baptisia is good also.

I like the purple and blue flowers, but I know yellow and red are better for bees. Butterflies are more attracted to those colors also, right?

Anything else I should know...???

And finally, my back yard. This one needs revamping. I have canna... wich really do no good. I'm going to move them. And the beebalm while very pretty... is just too darn tall. The asters are too. I'm gonna have to put them in the back someplace....always updating, right!

If you have room, i would reccomend oak and hackberry(or shugarberry) trees, as both are host a very wide variety of butteflies. I think there are over 10 species that can be attracted by oak and hackberry combined.

Ptelea trifoliata/wafer ash/hops trees host giant swallowtails, and you could plant them in the ground, since they're cold hearty. The only thing is, they're strictly an understory tree and don't tolerate a lot of direct sunshine.
Butterflies are attracted to all colors, so don't let the color of a flower be what decides whether or not you get it for butterflies to nectar on. Sulphurs have a decided preference for red flowers, but they're the only ones that are picky about flower color.
I've never grown the type of hibiscus you've got, so I can't say whether or not butterflies like them.
Some more good trees to plant as all purpose eggs/caterpillar hosts would be wild black cherry - tiger swallowtails, red-spotted purples, and others - black willows - viceroys, red-spotted purples and others - and sassafras and/or spicebush - spicebush swallowtails.
These are all just suggestions for trees/plants you can incorporate into your gardening plans.

Greetings from New Braunfels, Tx. I just wanted to tell you I have alto-caerulea passionvine and it definately does host gulf frits. If fact, when I bought it I picked out the one plant that had the most eggs on it, and the female was still trying to lay eggs on it, as I was taking it to the car. The guy who checked me out, tried to discretly pick off two gulf frit cats that were on the plant, and I very politely but firmly told him I wanted them there! I guess non butterfly lovers think we're kind of crazy. I live on a creek and have numerous hackberry trees, so I have lots of question marks, hackberry emperors, and tawny emperors. All of these love rotting fruit, and are very easily attracted by it. In fact, to make it more appealing to them, put aside your rotting fruit in an airtight container, add a little dry yeast and molasses to it, and let it ferment, then pour the liquid out on a plate for them. They go bonkers over it! It's fun to watch them. Some actually get a little drunk on it too. One thing I'm learning in planting my first butterfly garden this year, is it's all trial and error. What works for some people in some areas doesn't work the best for everyone. I've already pulled out several plants that weren't working, and add more weekly it seems. I'm running out of flower beds. Pretty soon my yard will be one huge flower bed, but that's okay with me. I love it!
