Oooh, Once a week? Hmmmmm. Maybe Succulents? I have hanging baskets in the fall thru early spring with Wave Petunias, Alyssum & Geraniums. But they get watered more than once a week.

Usha, if you really want to water only once a week, I'd suggest lining the baskets with plastic and poking just a few *small* holes for drainage. Even in winter, I have to water those baskets two or three times a week. Another thing I do is spray the outside of the coconut basket with enough force to soak the fibers so they don't wick the water away from the plants. I love hanging baskets, but they are a challenge.

I second GT's suggestions and I'd add lobelia, spider plants, and ivy.

I really like the look of the coconut fiber, too, but they dry out faster than unglazed pots. I didn't want to have to watch my plants as closely as planting in them demands; a windy day or too much sun and everything in them fries.

I like the idea of lining the basket with a plastic bag. But even without a bag, I've had great luck with Staghorn Fern in a 16" basket. They like to dry out a bit between waterings, anyway. Just keep them out of direct sun. Mine likes it on a north deck railing under filtering tree shade most of the day. A neighbor has almost a dozen hanging in trees, but they are tied to a board in the more traditional way. We both use time-release fertilizer on them and bring them into the garage if there is a chance of a freeze.
