How does one harvest sterile coconut milk?

Back in 1966 I was taking a tissue culture class and discovered in the literature that coconut milk had all sorts of goodies. At the time I think we called them auxins and cytokinins.

43 years passed.

Recently I found a coconut at the grocer, they are rare here. I attempted to sterilize a jar and lid in boiling water like my grandmother did for canning fruit. I soaked the coconut in bleach for about 24 hours. I sterilized a tool with heat and poked a hole in the coconut and poured the coconut milk into the sterile jar using the best techniques I could recall from my student days.

The next day I had half an inch of fungus growing on the coconut milk in my jar.

Hey, I am not a canner, but I believe that the coconut MILK itself must be heated to (whatever) temperature to kill the bacteria or fungus, not only the coconut itself by being "chloroxed" or the jar by being boiled. The contamination probably occurs when the milk is at room temperature and is being poured into the sterilized jar. The milk needs to be sterilized somehow, too. Do some research on this...

'Hermetically sealed, hypotonic, pyrogen-free and closely resembling blood plasma, its electrolyte composition having a qualitative resemblance to intracellular fluid. Coconut water has proven to be life-saving in many areas of the world where more sophisticated and conventional intravenous fluids were either too costly or not available. The fibrous outer husk of the coconut is removed and the smooth inner shell is insisted to insure its integrity. A slice is cut from the stem end, exposing three eyes. After the area is cleansed a sterile needle is inserted into one of the eyes to produce positive pressure, and a trocar (a surgical instrument used to drain off internal fluids) into a second eye from which the fluid can be drained. This can then be strained through a single layer of gauze in a funnel to screen out particular matter, into a transfusion bottle. This fluid is considered ready for use with no processing. Many reports speak of direct transfusion into the patient without the use of intervening filter of bottle.'
And for what it is worth, coconut water is the clear liquid of the coconut while coconut milk is the liquid which is expressed from the grated meat of the mature coconut. This 'milk' is used in cooking and the extraction of coconut oil.

Those aren't actually coconut palms, they are different fruiting palms that make fruit that has a somewhat similar taste to coconuts. The fruit doesn't look like coconut palms and neither do the palms themselves, but that doesn't mean they aren't any less beautiful though! I'm not familiar with the term Brazilian Wine Palm. I think you might be talking about a Jubaea chilensis (I know it as a Chiliean Wine Palm). They don't do well in Florida because they like cooler climates like those in the western US (or in Chile where they are native). They are VERY cold hardy though and also very beautiful! Quito coconut palms (Parajubaea cocoides) don't actually make fruit as far as I know but they look a lot like coconut palms which is what makes them very common for gardeners who want the tropical look but live in climates a bit too cool for coconut palms. Beccariophoenix alfredii is a palm really well known for being a "coconut look a like". It's only hardy into the mid to upper 20s so it's not significantly cold hardy, but it can handle cooler summers than coconut palms and those few degrees of cold tolerance make a big difference in climates that do get an occasional freeze every one in a while. many grocery store coconuts will not sprout now for some reason, or if they do, they soon die. I think that this is for a combination of reasons. First, I think something is being done to them either before they are shipped from overseas or once they arrive at U.S. ports. I have heard rumores that they are being radiated or gassed to prevent pest infestations here. Second, I think that they are being handled and thrown around much more roughly by the shipping crews than they used to be. (There really is almost NO quality work done by any nowadays!) This rough handling could cause hairline cracks in the nut that you can't see when you buy them. And third, for some STUPID reason, the produce importers and grocers are refrigerating them now, which they did not do in the past. As anyone with any sense knows, this destroys the freshness of tropical fruits (put a banana in the refrigerator and watch it turn black!) and for those of us who want to grown tropical fruits, prolonged exposure to cold temperatures near 40 degrees or below, can kill the seed. If you do decide to try to grow a grocery store coconut, try to find a large one with the husk first and foremost. The ones with the husk on them stand a much better chance of germinating than do the unhusked ones. Set it out in full sun in warm weather for a few weeks to make sure it browns up, then shake it to make sure it has plenty of milk and if it does, it is ready to plant. If no coconuts in the husk are available, whatever you do NEVER buy an unhusked one that has been cut all the way around to make it easier to crack open. This will almost guarantee you that it will crack in a day or two after it is planted. Soaking them in a bucket of clean water for 3-5 days seems to help them germinate, and may prevent them from cracking. ONCE YOU PLANT IT, UNDER NO CIRCUMSTANCES DIG IT UP OR PULL THE DIRT AWAY FROM THE EYES TO SEE IF IT IS SPROUTING. IF IT IS SPROUTING, THE MORE THE TENDER SPROUT IS EXPOSED TO THE AIR THE MORE IT WILL BROWN AND DIE. ONCE IT IS PLANTED LEAVE IT ALONE, WATER IT EVERYDAY AND HOPE FOR THE BEST! GOOD LUCK!

I wanted to make coconut ice cream today and found this recipe here, but I did not follow it exactly. Instead I used 1 can (18 oz) coconut cream 1-1/2 cups heavy cream 1/2 cup coconut milk 2/3 cup sugar 2 tbsp Amaretto I had considered making a custard, since I was using some coconut milk (which is very thin and freezes solid), but I thought the Amaretto would soften it sufficiently. I bought the coconut cream (Savoy brand) at a Thai market, and it was larger than I expected - more than two cups. I have no idea how this will turn out, but I will adjust the recipe next time if I do not love it. Kevin does not like coconut (except in curry, and I do not like coconut in curry), and so it is best for me to make something frozen if I use coconut. Coconut ice cream is one of my all time favorites, and it reminds me of being on the beach in Mexico, where the ice cream is made from fresh coconuts. I was inspired to make this ice cream because I bought some coconut milk eggnog and like that as much as I do regular eggnog. I'm also thinking of buying some eggnog that I like and putting it directly into the ice cream maker. Low temps lately have been in the mid to upper 50s, and so it hasn't been all that cold here, although it's supposed to dip down to 45° Christmas morning, which is about as cold as it gets here. This week-end it is not supposed to get above 60°, which is pretty rare, but I will be eating ice cream anyway.

I happen to like Thai and Indian food, so I use a lot of coconut milk in those but if that's not you, how about using it instead of milk in a smoothie? Hubby does a mean mango-banana-coconut milk smoothie :) I've also used it to marinade chicken legs and thighs for a couple of hours before throwing them on a bbq. I sometimes replace some of the water with coconut milk when I cook rice. Beyond thst, there are a zillion recipes for desserts - cakes, cookies, pies etc, - and pancakes, too.

ronalawn82's note on "milk" vs "water" helped me find a number of sites on pasteurization of coconut water.

I wonder what would pasteurization do to auxins and cytokinins?

I don't know if I will ever get another coconut. They are rare in the small towns in the high deserts. I had thought of sterile needles. I might be able to get a couple at the horse feed store.

Extract your coconut water and milk as cleanly as possible, then simply freeze it in small portions until you are ready to use it. freezing won't hurt the auxins and cytokinens, and you will not have to contend with spoilage.
