More seed collecting questions

Ok, I've searched the seed collecting forum, couldn't find a descent answer. I've been waiting and waiting to collect seeds from my astilbe. Everything I read says to wait till the flowers dry up and brown, then many suggest cut the head and place in a bag and let the seeds fall out. My problem w/ that is, well, my flower heads dried off months ago, and I see the lil green pods. Am I supposed to wait for those to go brown? Or can I cut them at anytime.

I have a couple pending trades for these, and REALLY don't want to screw this up.

Also, the same thing w/ the Butterfly bush seeds. I keep reading to wait till the flower dries up and cut the head off and store to wait for the seeds to drop. Don't the seeds need time to produce and grow?? Am I missing something??
