Newbee ?s About Honey

This is my first year with hives. I have two of them which seem to be doing pretty good. The first one is a Ventilation hive http://www.beeworks.com/d_e_details.html

It is only a hive body with a shallow super.

The second hive is an 8-frame hive with the hive body and two shallow supers.

I was in the hives today and noticed the top super of the 2nd hive was almost full of honey. This sounds like a stupid question, but when can that be taken out to extract.

Also, I've been told I need to leave at least one super with the hive body so they'll make it through the winter w/o starving. I'm from North East Pa by the way.

My plan was to leave the 1st hive alone since I only have the one super, and for the second one to extract the honey from that top super.

After extraction do I put the super back in with the extracted frames for them to clean up?

I still haven't bought an extractor yet. Can I get some help on what to purchase online w/o spending too too much money. I don't mind having only a couple frames at a time.

Any help / suggestions would be great.

Thanks In Advance
