how to force clump recently dug Heritage River Birch trees

I resently dug up two single trunked dormant river birch trees that have about 1 inch wide trunks. They are now in bareroot form.

I know they need to have time to regain a better root development.

I do not want to plant them in the ground right now; instead, I want to pot them up in 15 gallon size pots and keep them dormant in my garage over winter. If I do this, will they surive if in the spring, I cut them back in an effort to make them clump and grow multiple trunks?

If not should I prune shorten them less drastically and wait a full growing season for them to develop a better root system before trying to cut them all the way back in the effort to try and force multiple trunk growth in each of these birch trees?
