Changing a rose/cottage garden into a potager

As some of you may know, my mom had a very bad reaction to a yellow jacket sting last August. She developed hives and has to be very careful now, in the garden. She loves gardening, so she's never going to stop...and she has her medicines, just in case.

Anyway, we are redesigning some of her gardens, to take out features that attract yellow jackets, as well as make it easier to access, as she gets older. She moved four years ago, so her gardens are just getting established. The front yard (south side) has roses and cottage garden flowers all along the fence, with grass in the middle. It's not a very big space (about 40' x 25') with a front walk though the middle.

Our plan is to take out most of the grass, leaving paths only, and putting in herbs and some vegetables. Has anyone done this in their garden? Any suggestions?

She still has the west side for her bigger vegetables, but she has been using more arches and rectangular beds the last few years, rather than traditional rows. We were thinking of putting lettuce, spinach, chives, onions, garlic, cherry tomatoes, bush beans, climbing peas, basil, dill, sage, tarragon and rosemary in the front. Any other suggestions? She keeps the dill trimmed (even before the yellow jackets) since she likes dill weed, not dill seed.
