Transplanted Rescue Trees ... Help Keeping Them Alive

I live in northern Michigan and I "rescued" about a half dozen of sugar maples this past weekend. They were going to get plowed under for a new construction in a couple days and they let me come in and dig them up. They are still pretty small, only about 6-8 feet tall and the largest one is about 1 inch in diameter. I know this wasn't the optimal time of year to transplant, but I'm hopeful.

So I planted them as soon as I got home that evening, out of ground maybe 2-3 hours, and have been watering them twice a day since Monday. I dug them up about a foot of soil all the way around and down as far as I could dig to get as many roots as possible. Some of the soil feel off of them and some had "good" roots, some had little. Right now the leaves on them are kind of "wilty" and I'm hoping they're just pouting a little bit.

So, I guess my questions are:

Is there anything else I should be doing to give them a fighting chance?

If the trees totally drop all their leaves, does that mean they died or is there a chance they will still make it?

Should I put any fertilizer to them? Say, a layer of cow manure?
