What to do after blooms?

We recently (within the last 3 weeks) transplanted some foxgloves and peonies (herbaceous and tree). Fortunately, these are all healthy and blooming post-transplant. We have read several threads with regards to dead-heading them after bloom. Don't we want them to re-seed so that we can get more blooms next year? And do we want to just leave them alone since they've been recently transplanted? Or is it better to cut the blooms so that the energy goes to the roots? Any opinions?
